It has been a year since I’ve graduated from San Jose State University. Time truly does fly! So, in honor of my one-year anniversary and graduation season; I thought it was a good idea to share my thoughts and experience as a new grad. Something a little different from my usual posts but I reassure you, it’s going to be a good one. Well, where do I start? First off, it is such a blessing and an honor to be the first in my family to graduate from a University. A First generation college graduate. I hold such pride when I tell people this. I remember the first day at San Jose State. Standing in front of a campus map feeling lost and unsure where I was going. Little did I know that the building where my math class was in was literally in front of me. I was a timid but curious student. Attending a school with such large diversity and in the middle of downtown San Jose. Coming from a small town where most of the people I grew up with looked like me. Skip to five in a half years later, and I was handing my graduation application to the dean of social sciences. Covered in sweat, my anxiety starting to kick in, everything was becoming into reality. I was about to graduate, I was about to be done with one chapter of my life. When I left the dean’s office, a rush of air blew my hair back and I suddenly tasted salty tears. I cried. Not of sadness of course, but of relief. I finally did it, I submitted my application for graduation and was only a semester away from walking the stage.
I love subscription boxes! It’s the best feeling ever when you receive a box full of goodies. To be honest it feels like my birthday all over again but in this case, I’m gifting myself some amazing products. Don’t you think? Anyways, before I became vegetarian, I subscribed to a few monthly subscription boxes. Trying new products always excited me. As a beauty enthusiast and skincare fanatic, why not grow my collection, right? Well when I decided to get rid of every non-cruelty free product I owned, I began my search for vegan products. So I thought, what better way to try new products than to subscribe to a cruelty-free subscription box. Although, I had no idea who offered vegan products besides ipsy. But they only offered some cruelty-free products. It wasn’t certain that you would receive them. So I decided to look for a box more practical for my lifestyle.
So I googled, cruelty-free subscription box and Petit Vour came up amongst other ones. But I decided to pick this one. Why? you may ask. Well, for the most part, it’s $15 a month and they pair you up with four high-end sample size products. I personally love the box, inside and out. I mean a pink box with a cute quote that says “the creme de la cruelty-free”. Okay maybe it’s not a quote but a bold statement. But anyways, what comes in the box are all cruelty-free products. Personally, I don’t mind the sample size concept. If any of the products work for me I can just buy the original size on Petit Vour’s website! All in one! If you’re interested in a subscription box that is animal-friendly I would highly recommend this one. It’s affordable, appealing and vegan. An easy way to try out vegan products without the need of researching before you buy.

I remember waking up to the smell of caldo de albondigas on Sunday mornings. It was my favorite thing to have during the winter! This Mexican broth traditionally contains meatballs and veggies. But as I turned vegetarian I couldn’t have caldo de albondigas. My mom and I were trying to figure out a way to make this special dish vegan-friendly. So, we basically whipped up a meatless meatball recipe that you can add to your soups or favorite broth. You will need…
1 cup of quinoa
1/4 cup of onion
1 can of chickpeas
1/4 cup of green bell pepper
Making the meatless meatballs:
Blend the chickpeas with a blender or use a fork to smash them together. Cut the bell pepper and onion into tiny squares. After, you want to mix all of the ingredients together with your hand. Grab about a tablespoon size of the blend and roll them into balls. You can add them to your soup like that or preheat your oven to 350 degrees and bake them for 20 minutes to make them more firm.
This recipe makes 15 meatless meatballs; enjoy.
