Easy Eggless Vegan Breakfast Tacos

I always have trouble deciding what to have for breakfast. Before I was vegan it was easy for me to whip up some eggs and call it a morning. But since I don’t eat eggs anymore it’s been harder for me to think of different vegan breakfast foods I can make. Because healthy smoothies, oatmeal, and avocado toast get’s boring over time. So I decided to recreate my usual breakfast in a humane way using tofu! It almost looks as if the tofu mimics the white scramble eggs. The reason why it looks like that is because you want to shred the tofu in between your hands. Don’t be afraid to get messy because that is the trick for the eggless tacos.

This recipe serves 6 tacos perfect for a breakfast meal for two. You can have this for Taco Tuesday or any day you’re craving some Mexican fusion. Also don’t be afraid to add your favorite veggies to your eggless scramble. Be creative and change up the recipe! That is what I do with almost 70% of the recipes I find online. Switch it up and make a scramble eggless sandwiches with vegan Daiya cheese. Substitute the red mini peppers with mushroom and avocado. The combinations are endless! That’s the fun thing about cooking.

  1. First thing is first, chop the onion and sweet mini peppers into small pieces.
  2. Grab your block of tofu and cut it in half. Grab the half of your tofu block and crumble your tofu with your hands. The goal is to have the tofu look like white scramble eggs.
  3. Grab a pan and turn on the heat to medium. Measure 1 tbsp of any oil that you use. I like using vegtable oil or olive oil.
  4. Once your oil is heated up add your onion and saute it until golden. When that is done add your sweet mini peppers (or vegetable of your choice) and shredded tofu. Saute mixture for about 3 minutes.
  5. Lower your heat to low and add all the spices (cumin, paprika, garlic salt, and pepper). Mix everything together and let it cook for around 5 minutes. This helps the tofu soak up all the delicious spices.
  6. Heat up your tortillas and assemble your tacos. You can add any toppings like cilantro, salsa, or avocado.
